Chocolate Lava Cake

Recipe: Makes four ramekins
Cake:
120 g 78% dark chocolate
90 g browned butter
45 g brown sugar
2 eggs
2 egg yolks
35 g all-purpose flour
1 tsp vanilla extract
Directions:
1. Brown the butter over medium heat. Add chopped chocolate to the butter while still hot and let it melt with the butter, constantly stirring until smooth.
2. Whisk brown sugar with eggs and egg yolks until light in colour. Add vanilla extract.
​3. Whisk the egg mixture with the butter and chocolate mixture until well-mixed.
4. Sift dry ingredients into the egg mixture.
5. Scoop batter into buttered ramekins.*
6. Bake at 400 F for 12 minutes.
7. Serve warm with ice cream on top!

*Note: You can leave the cake batter in the fridge for up to one week and bake it straight from the fridge!
