Red Velvet Cheesecake Cookies

Recipe: Makes twenty-four cookies
Cookies:
200 g all-purpose flour
20 g cocoa powder
1 tsp baking soda
115 g butter, room temperature
200 g brown sugar, light
1 egg
50 g Greek yogurt, plain
2 tsp vanilla extract
2 tsp red food colouring
100 g white chocolate, chopped

Cream Cheese Filling:
225 g cream cheese, room temperature
25 g granulated sugar
Directions:
1. Cream the butter and sugar together until thoroughly mixed. Mix in the egg and continue whipping.
2. Mix the yogurt, vanilla and red food colouring together. Mix with the butter mixture.
3. Fold in the cocoa powder, flour and baking soda.
​4. Fold in the chocolate. Let rest in the fridge for at least 30 minutes.
5. To make the filling, whip the cream cheese and sugar together until smooth. Pipe mixture onto parchment paper into 15 g spheres and leave in the freezer until solid.
6. Take 30 g of the cookie dough and flatten. Place the cream cheese filling inside and wrap until it is fully enclosed. Repeat for all of the cookies.
7. Bake at 350 F for 10-11 minutes. Let sit for at least 15 minutes before serving.
