Spiced Oatmeal Cookies

Spiced oatmeal cookies with chocolate chunks cut in half on parchment paper

Recipe:

115 g browned butter

100 g demerara sugar or dark brown sugar

50 g light brown sugar

1 egg

1 tsp vanilla extract

110 g all-purpose flour

125 g rolled oats

1 tsp salt

0.5 tsp baking soda 

1 tsp cinnamon

1 tsp pumpkin pie spice

0.5 tsp nutmeg

100 g 70% dark chocolate, chopped â€‹

Directions:

1. Whisk cooled browned butter and both sugars until smooth.

2. Whisk in one egg. add the vanilla extract and whisk. 

3. Fold in the dry ingredients.

4. Fold in the chocolate chunks.

6. Let rest in the fridge for at least one hour.

7. Roll the dough into 30g pieces and place on a tray lined with parchment paper.

8. Bake at 375F for 10-12 minutes, just until the middle is still soft but the edges are browned. 

9. Let cool for at least 10 minutes before enjoying!
