Recipe:

Lumpia Wrappers:

100g flour
170ml water 
A pinch of salt

Filling:

Saba bananas

Jackfruit

Brown sugar

​

Syrup:

100g Brown sugar

150g Water

Recipe

  1. For the lumpia wrappers, slowly add the water to the flour and salt, mixing continuously until it yields a brushable consistency. ​​

  2. On a non-stick preheated pan, brush a thin layer of the lumpia wrapper batter. Cook on both sides for 1-2 minutes, until the batter is no longer sticking to the pan but still pliable.

  3. Wrap half of a saba banana with one piece of jackfruit and a teaspoon of brown sugar in the lumpia wrapper. Repeat for all the lumpia wrappers.

  4. Fry the wrapped bananas in heated neutral oil until the wrapper is golden brown on all sides.

  5. Heat the brown sugar and water over medium heat until the sugar dissolves and the consistency is just about to thicken. Add more water if needed to adjust.

  6. Roll the wrapped banana in the syrup and let it cool on parchment paper.
