Ingredients
Cookie Base
250 g medium brown sugar
155 g all-purpose flour
115 g browned butter
1 tsp salt
0.5 tsp baking soda
2 large egg yolks
1 Tbsp vanilla extract
Caramel Shards
0.25 cup sugar
0.25 cup water
Preparation
To make the caramel shards, add the sugar and the water to a saucepan. Leave it to caramelize on medium-high heat. Once it turns thick and into a caramel colour, immediately pour it onto parchment paper. Let cool.
whisk together cooled browned butter and sugar until smooth.
thoroughly whisk in the egg yolks until it is lighter in colour, add the vanilla extract and whisk.
fold in the dry ingredients.
Break the caramel into smaller pieces. Fold into the cookie dough.
Roll the dough into 30g pieces and place on a tray lined with parchment paper.
Bake at 350F for 9-10 minutes, just until the middle is still soft but the edges are browned.
Let cool for at least 10 minutes before enjoying!
