About the Recipe
When I used to sell desserts, these brownies were one of my top sellers because they were just so GOOD. The different textures and flavours are so reminiscent of s'mores on a summer day.

Ingredients
Brownie
150 g 85% chocolate
150 g butter
200 g brown sugar
80 g all-purpose flour
10 g Dutch-processed cocoa powder
3 eggs + 1 egg yolk
1 Tsp vanilla extract
1 tsp instant coffee
1 tsp salt
50 g chopped chocolate
Marshmallows (Enough to fit on top)
Crumb
2 cups graham cracker crumbs
75 g melted butter
1 tsp honey
Preparation
1. Melt the 150 g butter and 150 g of chocolate over a pot of simmering water. Let cool.
2. Mix the ingredients for the crumb together and press evenly into a 8x8 square pan lined with parchment paper. Set aside to set in the fridge while you make the brownie batter.
3. Whip the eggs, egg yolk, vanilla extract and brown sugar until it becomes lighter in colour. Mix in the chocolate and butter mixture.
4. Sift the cocoa powder, salt, cocoa powder, and flour into the chocolate mixture and fold in until just combined. Fold in the chopped chocolate.
5. Put the brownie batter into the 8x8 pan and bake at 350 F for 25-30 minutes. It is ready when you can put a skewer in the middle and a few crumbs stick.
6. Let cool completely before putting marshmallows on top, toasting with a torch or in the broiler for 3-5 minutes.
