About the Recipe
This cookie was a non-negotiable for my christmas boxes this year for two reasons:
One: All of my other cookies were beige and kind of lacked colour. Don’t get me wrong, I love all the cookies that I made in my box this year but aesthetically, they were all becoming kind of monochromatic together. Ube just gives that vibrant purple pop of colour that contrasts with my cookies, the flavour is so so unique compared to the others cookies and, christmas is meant to be colourful!
Second: when people think of filipino food, the first thing that usually comes to mind is is ube I really wanted my cookie box to have Filipino-inspired flavours because this year was the year that I went to the Philippines for the first time and the year that I baked sooo many Filipino desserts which has connected me not only with my culture, but with all of you this year! It is just too iconic not to put in this box.
So here are my ube crinkle cookies!
They’re soft, have a strong vanilla ube flavour and the dusting of icing sugar just makes it all the more festive.

Ingredients
56 g unsalted butter, soft
100 g white sugar
1/2 tsp baking powder
1/4 tsp salt
1 egg
120 g flour
2 tsp ube extract
3 tbsp powdered ube
Sugar topping
30g powdered sugar
30g white sugar
Preparation
Cream the butter and sugar together until light and fluffy. Mix in the egg and ube extract until the mixture is smooth.
Sift in the flour, salt, baking powder, and ube powder into the egg mixture and fold in gently.
Let the dough rest in the fridge for at least one hour.
Preheat oven to 350 F. Combine the two sugars of the sugar topping. Roll dough into 25g balls and roll in the sugar topping mixture and slightly flatten.
Bake for 10-12 minutes and let cool for at least 30 minutes before serving.
