Ube Cake

Recipe:

Cake:

5 eggs, separated

130 g sugar (divided by 2)

80 g oil

125 g flour

2 tsp ube extract

2 tbsp ube powder

1/2 tsp baking powder

Whipped cream

35 g white sugar

400 ml whipping cream

1 tsp vanilla extract

Recipe:

  1. Whisk the egg whites until frothy, then slowly add 65 g of the sugar until it reaches a soft peak.

  2. Whisk egg yolks with the rest of the sugar until frothy, then mix in the ube extract and oil.

  3. Sift the dry ingredients together in a separate bowl. Fold one-third of the meringue and one-third of the dry ingredients into the egg yolk mixture, alternating between the two until it is all mixed together. Mix carefully to prevent the egg whites from deflating.

  4. Place batter into a sheet pan or two 6-inch cake pans. Bake at 350 F for 10-12 min (sheet pan) or 15-20 min (6-inch cake pans)

  5. Whip the whipped cream ingredients together until it reaches a soft peak.

  6. Layer and decorate!
